This recipe for tzatziki is simple and delicious. Use this sauce with the falafel recipe if you like or grill some veggies and dip!
1 cup Greek whole milk, grassfed yogurt
1 cucumber, seeded, grated and drained
2 cloves garlic, finely minced
1 teaspoon lemon zest plus 1 tablespoon fresh lemon juice
1/2 to 1 tablespoon dried dill (use fresh if you like, 2 TBS)
Kosher salt and freshly cracked black pepper
In a medium bowl, whisk together the yogurt, cucumber, garlic, lemon zest, lemon juice and dill. Season with salt and pepper. Chill
