Arugula & Sweet Potato Bowl

A very kind person gifted us a bag full of fresh and tasty, homegrown arugula. We happily planned our dinner with these delicious greens in mind. Arugula is a cruciferous vegetable, a cousin of broccoli, kale, and cabbage. The leaves have a peppery, spicy flavor which we love. Arugula has some great health benefits too, so pick up some arugula this week and try out this tasty bowl.

We grilled beef Bistro Filets from Keller's Farm Store for this recipe. Bistro Filets are just like filet mignon, but half the price! Enjoy!


Arugula & Sweet Potato Bowls

Ingredients:

Beef Bistro Filets or choice of protein

3-4 Large sweet potatoes cubed and roasted

Large portion of arugula or your favorite super green

1/2 Red onion sliced very thin

Feta cheese crumbles

Olive oil

Balsamic vinegar

Dijon mustard

Salt & Pepper



Directions:

Roast your sweet potatoes! Preheat oven to 425 degrees. Cube the potatoes into about one inch cubes, drizzle with olive oil, season with salt and pepper and toss. Place on cookie sheet covered with parchment paper and roast in the oven at 425 degrees for approximately 45 minutes, or until your desired crispiness.

While potatoes are roasting, prepare your protein. We salt and pepper the bistro filets and let sit for a few minutes. Then we grill them until they are medium done. Cover and set aside.

Slice your red onion very thin and set aside. Wash and dry arugula, set aside. Prepare the sauce by mixing 1 TBS olive oil, 2 TBS balsamic vinegar, 2 tsp Dijon mustard, mix well and season with salt and pepper.

Slice the filets or protein of choice.

Layer the prepared ingredients...

Roasted sweet potatoes, arugula, sliced red onion, slices of filet or protein of choice, sprinkle with feta cheese crumbles, then drizzle with the sauce! Make as many servings as you like. Enjoy! This is absolutely one of our most favorite meals. We hope you like it too.
