Some days we just don't know what to prepare for dinner. Other days can be so busy that we want something easy to fix. And some days we are SO hungry we simply have to throw something together quickly and start eating! This is how "Anything In A Tortilla Night" started. Al asks if we have anything we can just heat up and roll into a tortilla and voilà, it's delicious and we use up our leftovers!
In our refrigerator this past week, we had some cooked sweet potatoes, tempeh, super greens, goat cheese, avocado and siracha. We warmed up the potatoes and tempeh, topped it off with the rest and rolled it up into a tortilla. Delicious and filled with good carbohydrates for busy cyclists!
Be creative, keep it simple and load up a for tortilla dinner. Let us know how you made yours so we can try it too! Here are a few ideas to get you started...
Start with your favorite tortilla! We like the uncooked whole wheat tortillas from Costco. Warm them up in a pan and they are soft and delicious.
Look in the refrigerator for fabulous leftovers.
Fill your tortilla with some healthy carbohydrates like, roasted or shredded potatoes (sweet or regular), cooked brown rice, cooked rice noodles for an Asian twist (use your leftover Asian takeout), or simply some black beans & corn.
Add a protein like leftover beef, chicken, salmon , egg or tempeh.
Add cheese if desired...goat cheese, cheddar, feta, pepper jack.
Add veggies of any kind! Super greens, bell peppers, onions, tomatoes, cabbage, shredded carrots, zucchini. squash, bean sprouts, cilantro, etc.
Throw on some delicious avocado, or guacamole, salsa, green chile, Siracha, Hoisin sauce if you are going Asian style, even hummus or tahini if you make a Mediterranean tortilla. Yum!
Roll it up and enjoy!
